30 Before 30 - New Recipe

Looking for a very delicious, healthy and quick meal for a week night?  I have a new recipe that you are all going to love!  I tried it for my 30 Before 30 list, and it was a big hit, so I thought I'd share it with you.

INGREDIENTS:
4 skinless, boneless chicken breast halves
1/4 cup all-purpose flour
1/4 teaspoon salt
4 tablespoons butter
1/2 cup dry white wine and/or chicken broth
1/4 cup sliced green onions
1/2 cup mixed fresh herbs {I used cilantro and parsley}
1/4 teaspoon coarsely ground black pepper

DIRECTIONS:
Pound the chicken until roughly 1/4 inch thick.  On a dish, combine flour and salt, then coat chicken in the mixture.  In a skillet heat 2 tablespoons of butter {I used extra virgin olive oil, rather than butter} over medium heat.  Cook chicken until done, transfer to serving dish and keep warm.  Add wine/broth to skillet, add in green onions, fresh herbs, pepper, and whisk in 2 tablespoons {I used one tablespoon} of butter.  Let simmer.  Once heated drizzle sauce over chicken and be sure to top with onions and herbs.

Simple right?  I served it with some steamed veggies and roasted potatoes, and my goodness it was delish!  it was very light, fresh and full of flavor - not to mention it only took about 20 minutes to make from start to finish {which is really the best part of all}!  Will this be a recipe you'll try?
