Over the weekend I tried another new recipe for my 30 Before 30 List, and I think you would all enjoy giving these delicious Banana Pecan Waffles a try!
- 1-3/4 cups of all purpose flour
- 2 table spoons of sugar
- 1 table spoon of baking powder
- 1/2 tea spoon of cinnamon
- 1/4 tea spoon of salt
- 2 small bananas, mashed
- 2 eggs
- 1 cup of milk
- 1/4 cup of cooking oil
- 1 tea spoon of vanilla
- 1/2 cup of chopped pecans
In a large bowl stir together flour, sugar, baking powder, cinnamon, and salt.
In a medium bowl, beat together banana and eggs. Stir in milk, cooking oil, and vanilla.
Add wet mixture to dry mixture and stir. Batter should be slightly lumpy. Stir in pecans.
Add batter to preheated, lightly greased waffle iron, and cook as per manufacturer's instructions.
Repeat with the rest of the batter. To keep prepared waffles warm while making all the waffles, keep in oven at 300 degrees F until ready to serve. Top as desired, and enjoy!
